Paprika and Garlic Roasted Chickpea Salad with Pea Shoots

16 oz chickpeas, drained

1/4 cup olive oil

1/2 cup chopped green garlic or 2 cloves garlic, smashed

1 teaspoon kosher salt, plus more for serving

1/2 teaspoon smoked paprika or paprika

2 cups pea shoots

3 oz goat cheese

Handful of pita chips, lightly crushed

1 lemon

Preheat your oven to bake at 300 F. In a small baking dish toss together the chickpeas, green garlic, 1/4 cup of olive oil, 1 teaspoon kosher salt and smoked paprika. Place in the oven and bake for 1 hour. Remove from the oven and cool to room temperature. In a medium bowl toss together the roasted chickpeas along with any oil left in the pan and the pea shoots. Crumble in the goat cheese and pita chips and squeeze half a lemon over the top. Sprinkle a large pinch of salt in the bowl and gently toss everything together. Serve immediately.
