Strawberry, Basil and Balsamic Crostini with Whipped Feta


Ingredients:


1 baguette, cut into 1"thick slices

1/4 cup + 2 tablespoons olive oil

salt and pepper

7 oz feta

4 oz soft goat cheese like chèvre

1/4 cup basil, chiffonade

2 pints strawberries, quartered or sliced

2 tablespoons balsamic vinegar


Directions:


Preheat the oven to 400 F.

Lay the baguette slices out in a single layer on a baking sheet. Brush the tops with the 2 tablespoons of olive oil and season with salt and pepper. Bake for 15-20 minutes or until golden brown and crispy. Remove from the oven and cool to room temperature.

While the bread bakes, place the goat cheese, feta, and remiaining 1/4 cup of olive oil in a food processor. Blend until smooth.

Spread the goat cheese mixture onto the crostini in a nice layer, repeat with remaining crostini. Place on a plate or platter.

In a medium bowl toss together the strawberries, most of the basil (leave a little for garnish), the balsamic and a large pinch of salt. Toss together and then spoon on top of the crostini. Serve immediately.
