Ingredients:
1 pound small bay shrimp
8-9 oz jar of cocktail sauce
1 cup of mayonnaise
2 tablespoons of fresh lemon juice
1 teaspoon champagne or white wine vinegar
1 clove of garlic, smashed
1/4 cup parsley leaves
1/2 cup basil leaves
2 tablespoons tarragon leaves
2 tablespoons chives, thinly sliced, plus more for garnish
salt and pepper
To make the greens goddess dressing, in a blender or the jar of an immersion blender place the mayonnaise, lemon juice, vinegar, garlic, parsley, basil, tarragon, chives, 1/2 teaspoon of salt and 1/4 teaspoon of pepper. Blend everything together until green and smooth, with some small flecks of green herbs. Taste for seasoning and add more salt, pepper or lemon juice as needed.
In a small jar or small glass, place a few spoonfuls of cocktail sauce, on top of that add a few spoonfuls of the green goddess. Add a large spoonful of the bay shrimp to top it off. Repeat process in small jars or glasses until all of the shrimp is used up. You should get 6-8 depending on the size of your glasses. Finish with fresh cut chives as garnish if desired. Serve cold.
These can be made ahead time and kept wrapped in the refrigerator until ready to serve.
