Farmer's Market Inspired Pizzas

I made three pizza doughs this morning and let them slow rise in the refrigerator until I was ready to use them for dinner. You can use any pizza dough recipe here, or even store bought. Here you will find the recipes for the three different kinds of pizza I made, you will need one ball of pizza dough for each.











Potato and Rosemary Cream Pizza with Prosicutto


ingredients:

1 ball of pizza dough

1/2 cup heavy cream

4 or 5 medium size potatoes

3 tablespoons olive oil

1 tablespoon Rosemary, roughly chopped

1 cup Fontina cheese, shredded

2-3 slices prosciutto

salt and pepper


Preheat oven to 500 F

Put the heavy cream in a large mixing bowl and beat with hand beaters or whisk until soft peaks form.

Roll out your pizza dough and place on a sheet pan. Spread the cream on top of the pizza dough, leaving a small border, about 1 inch. Season cream with salt and pepper.

Thinly slice the potatoes, and place in a small bowl. Add the olive oil and rosemary to the bowl, along with 1/2 teaspoon of salt and a few grindings of fresh pepper. Toss it all together and set aside.

Sprinkle half of the fontina all over the pizza and place the potatoes on top in a single layer, overlapping a little to cover the pizza. Sprinkle the remaining cheese over the top and then pull the prosciutto into smaller strips and scatter over the top.

Bake the pizza for 15-20 minutes or until golden brown and the cheese is bubbling.



Italian Sausage and Shishito Pizza


1 ball pizza dough

3 tablespoons cup olive oil

1 large clove garlic, thinly sliced

3/4 lb italian sausage, cooked and crumbled

8 shishito peppers, cut in half

1/2 of a walla walla sweet onion, cut into thin rounds

2 cups small mozzarella balls, cut in half

salt and pepper


Preheat oven to 500 F

Roll out pizza dough and move onto a sheet pan.

Drizzle the olive oil over the pizza dough and spread with a pastry brush, season with salt and pepper. Scatter the garlic over the pizza.

Spread the mozzarella balls over the pizza dough and top with the Italian sausage, evenly distributing both over the pizza dough. scatter the peppers across the pizza and top with the walla walla sweet onions.

Place pan in oven and bake for 15-20 minutes or until golden brown and bubbling.



Classic Margherita Pizza














Ingredients


1 ball pizza dough

3 tablespoons

2 large beefsteak tomatoes, cut into slices

2 cups small mozzarella balls, cut in half

1/4 cup fresh basil leaves

salt and pepper


Preheat oven to 500 F

Roll out pizza dough and move to a sheet pan.

Drizzle olive oil over the dough and spread with a pastry brush. Season with salt and pepper. Scatter 1 1/2 cups of the mozzarella balls evenly over the dough and top with the tomatoes. Scatter the remaining mozzarella over the tomatoes and place the pan in the oven. Bake for 15-20 minutes or until golden brown and bubbling. Let the pizza cool of 5 minutes before sprinkling the basil leaves on top. Enjoy!
