This breakfast bake is a good way to use up the those last few berries left in your refrigerator and any day old bread hanging around. It can be made the night before, refrigerated and baked off in the morning.
Ingredients:
1 loaf day old or dried out bread, cut into cubes
4 eggs
2 cups whole milk
1 cup heavy cream
1 teaspoon cinnamon
1 tsp almond extract
1/4 cup brown sugar
pinch of salt
2 cups blueberries
butter for greasing the pan
maple syrup for serving
Directions:
Grease a 9x13 pan with the butter and then put the bread cubes and blueberries in the pan and toss gently together.
In a mixing bowl whisk together the eggs, milk, heavy cream, cinnamon, almond extract, brown sugar and salt. Pour the egg mixture over the bread cubes and blueberries in the pan and toss together. Push the bread cubes down in the liquid, then cover the pan in plastic wrap and place in the refrigerator for 1 hour or overnight. You want the bread cubes to absorb most of the liquid.
Preheat the oven to 350 F.
Remove the plastic wrap from the pan and place it in the oven. Bake in for 45 minutes or until the bread has puffed up, the berries have released their juices and it has browned on top. Remove from the oven and allow to cool for 5 minutes before pouring maple syrup over the top and serving.
