Apple Pancakes with Maple Syrup


Ingredients:

2 cups all purpose flour
2 tablespoons sugar
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon ginger
1/4 teaspoon nutmeg
1/2 teaspoon salt
1 large egg
1 3/4 cup buttermilk
2 tablespoons butter, melted, plus more for cooking and serving
1 apple, grated
1 tablespoon vanilla
Maple syrup for serving

Directions:

In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, ginger, nutmeg and salt.
In a separate bowl, whisk together the buttermilk, butter, egg and vanilla. Mix in the grated apple.
Pour the wet ingredients into the dry ingredients. Stir with a spatula until the mixture is smooth, some small lumps are fine.
Heat a large skillet over medium heat. Lightly grease with the extra butter.
Spoon the batter, 1/4 cup at a time, onto the hot surface. Cook until small bubbles start to appear on the top, flip over and cook another 1-2 minutes, or until both sides are golden brown and spring back when gently poked in the middle.
Serve hot with butter and maple syrup.
